It All Began with Three Simple Values
When Paul Gilles opened his little frozen custard stand in 1938, he wasn't trying to build a famous Milwaukee landmark. He simply wanted to serve delicious frozen custard, honest food, and treat every customer with kindness and respect.

Hi, I'm Willy Linscott, current owner of Gilles Frozen Custard.
Every day we have the privilege of serving families celebrating birthdays, little league victories, first dates, anniversaries, and simple summer evenings together. We never forget that we're serving memories, not just frozen custard.
That history means everything to us.
As only the second family entrusted with Gilles Frozen Custard since 1938, we don't take that responsibility lightly. Every day we strive to honor Paul Gilles' legacy while continuing to improve the experience for every customer who walks through our doors.
