Back in 1938, Paul Gilles set out to serve something simple—delicious frozen custard, a few hot sandwiches, a few simple beverages and a place where people felt welcome and appreciated. He provided service with a smile!

Paul Gilles believed that if you treat

people right, give them honest value,

and never cut corners, they will come

back again and again—and bring

their family and friends with them.

of Gilles Frozen Custard.

​​At Gilles Frozen Custard, we don’t

just serve food — we are dedicated

to those same values that Paul Gilles

began so long ago. Over all those many

years, Gilles has been a happy part of

people’s lives.

First dates, family nights, celebrations, summer evenings, and simple "delicious" moments that turn into lifelong memories.

That history means everything to us.

We feel a deep responsibility to protect what Paul Gilles has always stood for — good food, fair value, and a friendly, family atmosphere where everyone feels welcome.

Through our long history we have added a few more values; never-ending continuous improvement in everything we do and a steadfast support of our long list of local community charities who help make the lives of those in need a little easier, to name just two.

Those Gilles Values are the foundation of our small business.​ They guide our decisions on a daily basis.

To our Milwaukee community — we thank you for your support. It means everything to us.


Because of you, Gilles is not just still here… it’s still meaningful.
